Beef Stew

Jennifer Jones gave me this recipe, which I think she said came from Utah!
I think it is the best, and my family loves it!!

1 1/2 lbs stew meat
1/4 onion, finely chopped
4 carrots, chopped
1 celery, chopped
5 potatoes, cubed
28 oz can whole tomatoes, not drained
16 oz. beef broth
2 tbsp parsley
1 bay leaf
1 tsp salt
1/4 tsp pepper
2 tbsp tapioca

Brown meat. Combine all ingredients in the crock pot. Cook on high for 4 hours and then turn to low for 4 hours!
